Max’s Favorite Chicken and Salsa Recipe

Being indoors during the cold winter months is a perfect time to play with your cooking skills! Let’s not forget that healthy eating is an integral part of looking better, feeling better, and living better!

This recipe is healthy and EASY! And it only takes 15 minutes from start to finish. Don’t worry about adding too much or too little of something, experiment and have fun! That’s the best way to learn how to cook!


Chicken Breast

Brown Mustard

Garlic Powder and Ground Pepper

A few medium tomatoes

One small white onion

Minced Garlic

Bell Pepper (green, orange, or red – you decide!)

Brown Rice


  1. Start by preheating your grill or broiler – if using a broiler, preheat to high
  2. Take the chicken breast on a clean surface and brush it with some brown mustard, a little garlic powder and ground pepper, but don’t overdo it.
  3. Put the chicken face down on your grill, or face up on your broiling pan. Season the other side if grilling; if broiling, season the other side when you flip the chicken.
  4. Make sure the chicken gets cooked all the way through. That will usually mean 4-5 minutes on each side, depending on the thickness of the meat.
  5. For the salsa, chop up a few medium tomatoes, one small onion, and the bell pepper. Mix them all together in a bowl, and add some minced garlic. Spread the salsa mix on your plate and use it as bed for your chicken.
  6. Cook some healthy brown rice any way that you choose (the 90-second microwave kind is the easiest and just as healthy!) and add that either to the salsa or as a side dish.
